- 1 400 g can chickpeas
- 1/4 cauliflower
- 1 sweet potato
- 1 cup green beans
- 1 capsicum
- 1 onion
- 2 garlic cloves
- 1/2 bunch coriander
- 1 400 ml can coconut milk
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tbsp olive oil
- 1/2 cup vegetable stock
- Salt and pepper to taste
Chop onion and mince garlic. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until softened.
Dice other vegetables into bite size pieces and finely dice coriander stacks (reserve leaves for garnish).
Drain chickpea liquid.
Add curry powder, cumin, and ground coriander, cook for 1 minute until aromatic.
Stir in finely chopped coriander stalks, diced sweet potato, capsicum, cauliflower, chickpeas, coconut milk, and vegetable stock. Bring to a simmer and cook for 20 minutes until the vegetables are tender.
Stir in chopped green beans and cook for another 2 minutes. Top with coriander leaves and season with salt and pepper.
Serve with rice or naan bread for a complete meal. Add 2 tsp of tomato paste before adding vegetables for a richer flavour.
