Ingredients
  

  • 1 fresh pineapple
  • 1 long red chilli
  • 1/2 cup fresh coriander
  • 1/3 cup spring onions
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions
 

  • Dice the pineapple into small, even pieces. Finely chop the chilli (remove seeds for a less intents chilli flavour), coriander, and spring onions.
  • In a large bowl, combine the diced pineapple, chopped chilli, coriander, and spring onions. Add the brown sugar and apple cider vinegar. Stir until well mixed.
  • Taste the salsa and adjust the seasoning, adding more vinegar if needed.
  • Cover and refrigerate for at least 30 minutes to allow the flavours to meld. Serve chilled or at room temperature.

Notes

For a smoky twist, grill the pineapple before dicing.
Adjust the level of chilli to suit your spice preference.
