- 1 fresh pineapple
- 1 long red chilli
- 1/2 cup fresh coriander
- 1/3 cup spring onions
- 1 tbsp brown sugar
- 1 tbsp apple cider vinegar
Dice the pineapple into small, even pieces. Finely chop the chilli (remove seeds for a less intents chilli flavour), coriander, and spring onions.
In a large bowl, combine the diced pineapple, chopped chilli, coriander, and spring onions. Add the brown sugar and apple cider vinegar. Stir until well mixed.
Taste the salsa and adjust the seasoning, adding more vinegar if needed.
Cover and refrigerate for at least 30 minutes to allow the flavours to meld. Serve chilled or at room temperature.
