Protein Brownies Recipe – Healthy Chocolate Brownies with Black Beans

- 1 x 400g tin black beans
- 125 g butter
- 3 eggs
- 2 tbsp cocoa powder
- 1 cup plain flour
- 1/2 cup white sugar
- 3/4 cup chocolate chips
Preheat oven to 180°C (350°F) and line a baking dish with parchment paper.
Drain black beans and wash under running water. Melt butter and combine with black beans in a food processor until smooth.
In a large mixing bowl, whisk together eggs until well combined.
Add the butter and pureed black beans, cocoa powder, plain flour, and sugar to the bowl. Mix until smooth.
Fold in the chocolate chips.
Pour the batter into the prepared baking dish, spreading it evenly.
Bake for 20 minutes, or until a toothpick inserted into the centre comes out clean.
Let the brownies cool in the pan before slicing into squares.
For a more intense chocolate flavour, increase cocoa powder to 3 tbsp.
You can add a sprinkle of sea salt on top before baking for a salted chocolate twist.
