Garlic mushrooms
These Garlic Mushrooms are quick to make and full of umami flavour. Oven baked in olive oil and butter with garlic and herbs, great breakfast or the perfect side dish for almost any meal.

- 400 g button mushrooms
- 4 garlic cloves
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Pre heat oven to 180°C (356°F) Then heat olive oil, butter, garlic in a pan or microwave on medium heat.
Cook butter oil mixture for 1 minute until fragrant.
Place mushrooms on baking tray lined with baking paper. Coat mushrooms with butter oil mixture and add thyme (if using), Bake at 180°C (356°F) 10-15 minutes until golden brown and tender.
Season with salt and pepper to taste, and garnish with fresh parsley before serving if desired.
• Add a splash of balsamic vinegar or lemon juice for extra brightness.
• You can use a mix of mushroom varieties like cremini or shiitake for added depth of flavour.
