- 200 g grated cheese
- 3 bacon rashers diced
- 1/2 onion finely chopped
- 150 g self-raising flour
- 1 tsp Dijon mustard
- 50 g spring onions, finely sliced
- 1 egg lightly beaten
- Salt and pepper to taste
Preheat your oven to 200°C (180°C fan-forced) and line a baking tray with baking paper.
Heat a non-stick frying pan over medium heat. Cook the diced bacon and onion until golden and fragrant. Set aside to cool slightly.
In a mixing bowl, whisk together the milk, egg, and Dijon mustard until smooth.
In a separate bowl, combine the self-raising flour, grated cheese, and spring onions. Add the cooled bacon and onion mixture.
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
Spoon tablespoon-sized portions of the mixture onto the prepared baking tray, leaving space between each puff.
Bake for 12-15 minutes or until the puffs are golden and cooked through. Allow to cool slightly before serving.
For a flavour boost, try adding a pinch of paprika or cayenne pepper to the mixture.
