Cauliflower Bake
This creamy and cheesy Cauliflower Bake is the perfect comfort food, packed with flavour and goodness. It makes a wonderful side dish or a hearty vegetarian main meal.

- 1 large head of cauliflower
- 1 cup grated cheddar cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup milk
- 2 tbsp butter
- 2 tbsp plain flour or gluten-free flour for a GF option
- 1 garlic clove minced
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Fresh parsley
Preheat oven to 180°C (350°F). Grease a baking dish.
Cut cauliflower into medium sized florets and steam or for 5-7 minutes until just tender. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until slightly golden.
Gradually add in milk, stirring continuously, until a smooth sauce forms. Add garlic and mustard, and cook for another 2-3 minutes until thickened.
Stir in cheddar and half of the parmesan cheese, then season with salt and pepper.
Place cauliflower florets in the prepared baking dish. Pour the cheese sauce over the top, spreading it evenly.
Sprinkle the remaining parmesan cheese on top.
Bake for 20-25 minutes until golden and bubbly. Garnish with fresh parsley if desired.
You can add a crispy breadcrumb topping by mixing breadcrumbs with olive oil and sprinkling over the bake before putting it in the oven.
