This Basil & Rocket Pesto is a flavour-packed, dairy-free alternative to traditional pesto. Made with fresh basil, peppery rocket, and a unique blend of sunflower seeds, pepitas, and nutritional yeast, it’s perfect for adding to pasta (try our pesto pasta), sandwiches, or as a topping for roasted veggies.

- 1 cup fresh basil
- 1 cup fresh rocket
- 1 lemon
- 2 cloves garlic
- 2 tbsp sunflower seeds
- 2 tbsp pepitas pumpkin seeds
- 3 tbsp nutritional yeast
- 1/3 cup extra virgin olive oil
- Salt and pepper to taste
In a food processor, combine basil leaves, rocket, lemon juice, and garlic. Pulse until coarsely chopped.
Add sunflower seeds, pepitas, and nutritional yeast. Blend until the mixture begins to smooth out.
Slowly drizzle in the olive oil while blending until the pesto reaches your desired consistency. Adjust seasoning with salt and pepper to taste.
Transfer to a jar or airtight container and refrigerate until ready to use.
For a creamier texture, add an extra tablespoon of olive oil or a splash of water.
Adjust garlic and lemon juice to taste based on your flavour preference.
