Hearty Vegetable and Chickpea Curry: This vibrant, plant-based curry is filled with wholesome vegetables and protein-rich chickpeas, simmered in a creamy coconut milk sauce with aromatic spices. Ready in just 30 minutes, it’s the perfect weeknight meal for a nourishing, flavourful dinner. Serve with rice or naan for a complete, satisfying dish.

Ingredients
  

  • 1 400 g can chickpeas
  • 1/4 cauliflower
  • 1 sweet potato
  • 1 cup green beans
  • 1 capsicum
  • 1 onion
  • 2 garlic cloves
  • 1/2 bunch coriander
  • 1 400 ml can coconut milk
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp olive oil
  • 1/2 cup vegetable stock
  • Salt and pepper to taste

Instructions
 

  • Chop onion and mince garlic. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until softened.
  • Dice other vegetables into bite size pieces and finely dice coriander stacks (reserve leaves for garnish).
  • Drain chickpea liquid.
  • Add curry powder, cumin, and ground coriander, cook for 1 minute until aromatic.
  • Stir in finely chopped coriander stalks, diced sweet potato, capsicum, cauliflower, chickpeas, coconut milk, and vegetable stock. Bring to a simmer and cook for 20 minutes until the vegetables are tender.
  • Stir in chopped green beans and cook for another 2 minutes. Top with coriander leaves and season with salt and pepper.

Notes

Serve with rice or naan bread for a complete meal. Add 2 tsp of tomato paste before adding vegetables for a richer flavour.
