Vegetable and Chickpea Curry
Hearty Vegetable and Chickpea Curry: This vibrant, plant-based curry is filled with wholesome vegetables and protein-rich chickpeas, simmered in a creamy coconut milk sauce with aromatic spices. Ready in just 30 minutes, it’s the perfect weeknight meal for a nourishing, flavourful dinner. Serve with rice or naan for a complete, satisfying dish.
Ingredients
- 1 400 g can chickpeas
- 1/4 cauliflower
- 1 sweet potato
- 1 cup green beans
- 1 capsicum
- 1 onion
- 2 garlic cloves
- 1/2 bunch coriander
- 1 400 ml can coconut milk
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tbsp olive oil
- 1/2 cup vegetable stock
- Salt and pepper to taste
Instructions
- Chop onion and mince garlic. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until softened.
- Dice other vegetables into bite size pieces and finely dice coriander stacks (reserve leaves for garnish).
- Drain chickpea liquid.
- Add curry powder, cumin, and ground coriander, cook for 1 minute until aromatic.
- Stir in finely chopped coriander stalks, diced sweet potato, capsicum, cauliflower, chickpeas, coconut milk, and vegetable stock. Bring to a simmer and cook for 20 minutes until the vegetables are tender.
- Stir in chopped green beans and cook for another 2 minutes. Top with coriander leaves and season with salt and pepper.
Notes
Serve with rice or naan bread for a complete meal. Add 2 tsp of tomato paste before adding vegetables for a richer flavour.
