Thai Beef Salad
This Thai beef salad is a refreshing and flavour-packed dish featuring tender slices of beef, crisp vegetables, and a zesty dressing. It’s clean eating at it’s best and perfect for a light lunch or dinner.
Ingredients
- 400 g beef sirloin or rump steak
- 1 cucumber
- 1 carrot
- 1 salad onion
- 200 g cherry tomatoes
- 100 g mixed salad leaves
- 1 red chilli
- 1/4 cup fresh mint
- 1/4 cup fresh coriander
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp sugar
- 2 tbsp vegetable oil
- Peanuts
- Lime wedge
Instructions
- Heat a grill or pan over high heat. Cook the beef for 3-4 minutes on each side, depending on desired doneness. Let it rest, then slice thinly.
- In a small bowl, whisk together fish sauce, lime juice, soy sauce, sugar, and finely chopped chilli for the dressing.
- In a large bowl, combine sliced cucumber, julienned carrot, halved tomatoes, thinly sliced onion, salad leaves, mint, and coriander. Add the sliced beef, top with chopped peanuts and lime wedge.
- Pour the dressing over the salad and toss gently to combine. Serve immediately or keep dressing separate until serving.
Notes
Adjust the spice level by adding more or less chilli to the dressing.

Steamed jasmine rice or rice noodles. Storage:
• Fridge: Up to 2 days (store dressing separately). Gluten-Free Option:
Use gluten-free soy sauce and fish sauce.
