Cauliflower Bake
This creamy and cheesy Cauliflower Bake is the perfect comfort food, packed with flavour and goodness. It makes a wonderful side dish or a hearty vegetarian main meal.
Ingredients
- 1 large head of cauliflower
- 1 cup grated cheddar cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup milk
- 2 tbsp butter
- 2 tbsp plain flour or gluten-free flour for a GF option
- 1 garlic clove minced
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Fresh parsley
Instructions
- Preheat oven to 180°C (350°F). Grease a baking dish.
- Cut cauliflower into medium sized florets and steam or for 5-7 minutes until just tender. Drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until slightly golden.
- Gradually add in milk, stirring continuously, until a smooth sauce forms. Add garlic and mustard, and cook for another 2-3 minutes until thickened.
- Stir in cheddar and half of the parmesan cheese, then season with salt and pepper.
- Place cauliflower florets in the prepared baking dish. Pour the cheese sauce over the top, spreading it evenly.
- Sprinkle the remaining parmesan cheese on top.
- Bake for 20-25 minutes until golden and bubbly. Garnish with fresh parsley if desired.
Notes
You can add a crispy breadcrumb topping by mixing breadcrumbs with olive oil and sprinkling over the bake before putting it in the oven.
