Ingredients
  

  • 125 ml milk
  • 200 g grated cheese
  • 3 bacon rashers diced
  • 1/2 onion finely chopped
  • 150 g self-raising flour
  • 1 tsp Dijon mustard
  • 50 g spring onions, finely sliced
  • 1 egg lightly beaten
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 200°C (180°C fan-forced) and line a baking tray with baking paper.
  • Heat a non-stick frying pan over medium heat. Cook the diced bacon and onion until golden and fragrant. Set aside to cool slightly.
  • In a mixing bowl, whisk together the milk, egg, and Dijon mustard until smooth.
  • In a separate bowl, combine the self-raising flour, grated cheese, and spring onions. Add the cooled bacon and onion mixture.
  • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
  • Spoon tablespoon-sized portions of the mixture onto the prepared baking tray, leaving space between each puff.
  • Bake for 12-15 minutes or until the puffs are golden and cooked through. Allow to cool slightly before serving.

Notes

For a flavour boost, try adding a pinch of paprika or cayenne pepper to the mixture.
• You can substitute the spring onions with chives for a milder flavour.

Storage
• Fridge: Store in an airtight container for up to 3 days. Reheat in the oven for best results.
• Freezer: Freeze in a single layer for up to 3 months. Reheat directly from frozen in a preheated oven at 180°C for 10-12 minutes.
 
Gluten-Free Option
• Replace self-raising flour with a gluten-free self-raising flour blend.
Dairy-Free Option
• Use dairy-free cheese and replace milk with a plant-based alternative like almond or oat milk.
Vegetarian Option
• Omit the bacon and add diced mushrooms or sun-dried tomatoes for a vegetarian twist.
