These oven-baked cheese and bacon puffs are a savoury delight perfect for lunchboxes, party platters, or a quick snack. Packed with gooey melted cheese, crispy bacon, and a hint of Dijon mustard, they’re sure to be a hit with the whole family. Plus, they’re easy to make and freezer-friendly, making them a convenient option for busy days.

Ingredients
- 125 ml milk
- 200 g grated cheese
- 3 bacon rashers diced
- 1/2 onion finely chopped
- 150 g self-raising flour
- 1 tsp Dijon mustard
- 50 g spring onions, finely sliced
- 1 egg lightly beaten
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (180°C fan-forced) and line a baking tray with baking paper.
- Heat a non-stick frying pan over medium heat. Cook the diced bacon and onion until golden and fragrant. Set aside to cool slightly.
- In a mixing bowl, whisk together the milk, egg, and Dijon mustard until smooth.
- In a separate bowl, combine the self-raising flour, grated cheese, and spring onions. Add the cooled bacon and onion mixture.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
- Spoon tablespoon-sized portions of the mixture onto the prepared baking tray, leaving space between each puff.
- Bake for 12-15 minutes or until the puffs are golden and cooked through. Allow to cool slightly before serving.
Notes
For a flavour boost, try adding a pinch of paprika or cayenne pepper to the mixture.
• You can substitute the spring onions with chives for a milder flavour.

Storage
• Fridge: Store in an airtight container for up to 3 days. Reheat in the oven for best results.
